Succulent hormone and antibiotic-free beef cheeks are sous vide cooked for 48hrs to tenderness in a kidney supporting TCM (traditional Chinese medicine) formulated tonic, infusing functional and nourishing qualities with umami flavour, and collagen richness, as well as nutrient-dense herbs and spices. The sauce base is then reduced and thickened to further intensify flavour, a perfect accompaniment with whole grains.
